Chinese Scallion Pancakes

Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 3/4 cup boiling water
  • 1/4 cup cold water
  • 1/2 teaspoon salt

For the Filling:

  • 1/2 cup scallions (green onions), finely chopped
  • 1/4 cup vegetable oil (for frying)
  • 1/2 teaspoon salt
  • Optional: 1/4 teaspoon sesame oil for added flavor

For the Dipping Sauce:

  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 clove garlic, minced
  • Optional: sliced chili peppers for heat

Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine the all-purpose flour and salt.
  2. Gradually pour in the boiling water while stirring with a fork or chopsticks until the mixture starts to come together.
  3. Once the dough is cool enough to handle, add the cold water and knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.
  4. Cover the dough with a damp cloth or plastic wrap and let it rest for at least 30 minutes.

Step 2: Prepare the Filling

  1. While the dough is resting, finely chop the scallions and place them in a small bowl.
  2. If using, add the sesame oil and salt to the scallions and mix well. Set aside.

Step 3: Roll Out the Dough

  1. After the dough has rested, divide it into 4 equal portions.
  2. On a lightly floured surface, take one portion of the dough and roll it out into a thin circle (about 8-10 inches in diameter).
  3. Brush a thin layer of vegetable oil over the surface of the rolled-out dough.

Step 4: Add the Filling

  1. Evenly sprinkle a portion of the scallion mixture over the oiled dough.
  2. Starting from one edge, roll the dough tightly into a log. Pinch the ends to seal.
  3. Coil the log into a spiral shape and tuck the end underneath. Flatten gently with your palm.

Step 5: Cook the Pancakes

  1. Heat a non-stick skillet or frying pan over medium heat and add a tablespoon of vegetable oil.
  2. Once the oil is hot, carefully place the pancake in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  3. Repeat the process with the remaining dough portions, adding more oil as needed.

Step 6: Prepare the Dipping Sauce

  1. In a small bowl, combine the soy sauce, rice vinegar, sesame oil, sugar, and minced garlic. Stir until the sugar is dissolved.
  2. Add sliced chili peppers if desired for extra heat.

  1. Once all pancakes are cooked, cut them into wedges and serve hot with the dipping sauce on the side.
