Ingredients
For the Dough:
- 2 cups all-purpose flour
- 3/4 cup boiling water
- 1/4 cup cold water
- 1/2 teaspoon salt
For the Filling:
- 1/2 cup scallions (green onions), finely chopped
- 1/4 cup vegetable oil (for frying)
- 1/2 teaspoon salt
- Optional: 1/4 teaspoon sesame oil for added flavor
For the Dipping Sauce:
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1 clove garlic, minced
- Optional: sliced chili peppers for heat
Instructions
Step 1: Prepare the Dough
- In a large mixing bowl, combine the all-purpose flour and salt.
- Gradually pour in the boiling water while stirring with a fork or chopsticks until the mixture starts to come together.
- Once the dough is cool enough to handle, add the cold water and knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.
- Cover the dough with a damp cloth or plastic wrap and let it rest for at least 30 minutes.
Step 2: Prepare the Filling
- While the dough is resting, finely chop the scallions and place them in a small bowl.
- If using, add the sesame oil and salt to the scallions and mix well. Set aside.
Step 3: Roll Out the Dough
- After the dough has rested, divide it into 4 equal portions.
- On a lightly floured surface, take one portion of the dough and roll it out into a thin circle (about 8-10 inches in diameter).
- Brush a thin layer of vegetable oil over the surface of the rolled-out dough.
Step 4: Add the Filling
- Evenly sprinkle a portion of the scallion mixture over the oiled dough.
- Starting from one edge, roll the dough tightly into a log. Pinch the ends to seal.
- Coil the log into a spiral shape and tuck the end underneath. Flatten gently with your palm.
Step 5: Cook the Pancakes
- Heat a non-stick skillet or frying pan over medium heat and add a tablespoon of vegetable oil.
- Once the oil is hot, carefully place the pancake in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Repeat the process with the remaining dough portions, adding more oil as needed.
Step 6: Prepare the Dipping Sauce
- In a small bowl, combine the soy sauce, rice vinegar, sesame oil, sugar, and minced garlic. Stir until the sugar is dissolved.
- Add sliced chili peppers if desired for extra heat.
Step 7: Serve
- Once all pancakes are cooked, cut them into wedges and serve hot with the dipping sauce on the side.
