Homemade Pancake Mix

Ingredients

For the Pancake Mix:

  • 2 cups all-purpose flour

Instructions

Step 1: Prepare the Pancake Mix

  1. In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, salt, and baking soda.
  2. Whisk the dry ingredients together until well blended. Make sure there are no lumps.
  3. Transfer the mix to an airtight container or zip-top bag for storage. Label and date the container if desired. This mix can be kept in a cool, dry place for up to 3 months.

Step 2: Make the Pancakes

  1. In a medium bowl, measure out 1 cup of the prepared pancake mix.
  2. Add the milk, egg, vegetable oil (or melted butter), and vanilla extract (if using) to the dry mix.
  3. Whisk until just combined. It’s okay if the batter is a little lumpy; do not over-mix, as this will create tough pancakes.
  4. Preheat a griddle or frying pan over medium heat. Lightly grease the surface with cooking spray, butter, or oil.

  1. Pour 1/4 cup of batter onto the hot griddle for each pancake. Leave some space between pancakes as they will spread.
  2. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
