Green Onion Pancakes

This delicious, flaky Green Onion Pancake recipe is a popular Chinese street food that can be enjoyed as an appetizer or a side dish. With a crispy exterior and a soft, flavorful interior, these pancakes are sure to impress!

Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 3/4 cup boiling water
  • 1/4 teaspoon salt

For the Filling:

  • 1/2 cup green onions (scallions), finely chopped
  • 1/4 cup vegetable oil (for brushing)
  • 1/2 teaspoon salt
  • Optional: 1 teaspoon sesame oil (for extra flavor)

For Cooking:

  • 1/4 cup vegetable oil (for frying)

Instructions

Step 1: Prepare the Dough

  1. In a mixing bowl, combine 2 cups of all-purpose flour and 1/4 teaspoon of salt.
  2. Slowly pour in 3/4 cup of boiling water while stirring with a fork or chopsticks until the mixture starts to come together.
  3. Once cool enough to handle, knead the dough on a lightly floured surface for about 5-7 minutes until it is smooth and elastic.
  4. Wrap the dough in plastic wrap or cover with a damp cloth and let it rest for at least 30 minutes.

Step 2: Make the Filling

  1. While the dough is resting, prepare the filling. In a small bowl, combine the finely chopped green onions, 1/4 cup vegetable oil, and 1/2 teaspoon of salt. If you’re using sesame oil, add it here as well.
  2. Mix well to ensure the green onions are evenly coated with the oil mixture. Set aside.

Step 3: Roll Out the Dough

  1. After the dough has rested, divide it into four equal pieces. Keep the pieces you aren’t using covered to prevent them from drying out.
  2. On a lightly floured surface, take one piece of dough and roll it out into a thin circle approximately 10 inches in diameter.
  3. Brush a thin layer of the green onion filling evenly over the surface of the rolled dough.

Step 4: Form the Pancake

  1. Starting from one edge of the circle, roll the dough tightly into a log. Pinch the ends to seal.
  2. Coil the log into a spiral shape and tuck the end underneath.
  3. Gently flatten the spiral with your palm, then roll it out again to form a thicker pancake, about 8 inches in diameter. Repeat this process with the remaining dough.

Step 5: Fry the Pancakes

  1. In a large non-stick skillet or frying pan, heat 1/4 cup of vegetable oil over medium heat.
  2. Once the oil is hot, gently place one pancake into the skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy. You can adjust the heat as necessary to prevent burning.
  3. Remove from the skillet and drain on paper towels to remove excess oil. Repeat with the remaining pancakes, adding more oil to the skillet as needed.

  1. Cut the pancakes into wedges and serve hot. They can be enjoyed plain or with a dipping sauce made of soy sauce, vinegar, and chili oil.
