Ingredients

Instructions

Step 1: Prepare the Batter

  1. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.

Step 2: Heat the Pan

  3. Remove the pancakes from the skillet and keep warm. Repeat with the remaining batter, adding more butter to the skillet as needed.

  1. Stack the pancakes on a plate and top with fresh fruit, shredded coconut, and a drizzle of maple syrup or honey.
