Ingredients
For the Dough:
- 2 cups all-purpose flour
- 3/4 cup boiling water
- 1/4 cup cold water
- 1/2 teaspoon salt

- 1/2 cup scallions (green onions), finely chopped
- 1/4 cup vegetable oil (for brushing)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper (optional)

- 1/4 cup vegetable oil (for frying)
Instructions
Step 1: Prepare the Dough
- In a large mixing bowl, combine the all-purpose flour and salt.
- Gradually pour in the boiling water while stirring with a fork or chopsticks until the mixture starts to come together.
- Add the cold water and continue mixing until a shaggy dough forms.
- Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.
- Cover the dough with a damp cloth or plastic wrap and let it rest for at least 30 minutes.
Step 2: Prepare the Filling
- While the dough is resting, finely chop the scallions and place them in a small bowl.
- Add the salt and black pepper (if using) to the scallions and mix well. Set aside.
Step 3: Roll Out the Dough
- After the dough has rested, divide it into 4 equal portions.
- Take one portion and roll it out on a lightly floured surface into a thin rectangle (about 1/8 inch thick).
- Brush a thin layer of vegetable oil over the surface of the rolled-out dough.
Step 4: Add the Filling
- Evenly sprinkle a quarter of the scallion mixture over the oiled dough.
- Starting from one end, roll the dough tightly into a log. Pinch the ends to seal.
- Coil the log into a spiral shape, tucking the end underneath. Flatten gently with your palm.
Step 5: Final Rolling
- Using a rolling pin, gently roll the coiled dough into a flat pancake, about 1/4 inch thick. Repeat this process with the remaining dough portions.
Step 6: Cook the Pancakes
- Heat 1/4 cup of vegetable oil in a large skillet over medium heat.
- Once the oil is hot, carefully place one pancake in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the pancake from the skillet and drain on paper towels. Repeat with the remaining pancakes, adding more oil as needed.
Step 7: Serve
- Cut the pancakes into wedges and serve hot with soy sauce or your favorite dipping sauce.
