Flaky Scallion Pancakes

These deliciously flaky scallion pancakes are a popular Chinese street food that can be enjoyed as an appetizer or a snack. With their crispy exterior and tender, layered interior, they are sure to impress!

Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 3/4 cup boiling water
  • 1/4 cup cold water
  • 1/2 teaspoon salt

For the Filling:

  • 1/2 cup scallions (green onions), finely chopped
  • 1/4 cup vegetable oil (for brushing)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper (optional)

For Cooking:

  • 1/4 cup vegetable oil (for frying)

Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine the all-purpose flour and salt.
  2. Gradually pour in the boiling water while stirring with a fork or chopsticks until the mixture starts to come together.
  3. Add the cold water and continue mixing until a shaggy dough forms.
  4. Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.
  5. Cover the dough with a damp cloth or plastic wrap and let it rest for at least 30 minutes.

Step 2: Prepare the Filling

  1. While the dough is resting, finely chop the scallions and place them in a small bowl.
  2. Add the salt and black pepper (if using) to the scallions and mix well. Set aside.

Step 3: Roll Out the Dough

  1. After the dough has rested, divide it into 4 equal portions.
  2. Take one portion and roll it out on a lightly floured surface into a thin rectangle (about 1/8 inch thick).
  3. Brush a thin layer of vegetable oil over the surface of the rolled-out dough.

Step 4: Add the Filling

  1. Evenly sprinkle a quarter of the scallion mixture over the oiled dough.
  2. Starting from one end, roll the dough tightly into a log. Pinch the ends to seal.
  3. Coil the log into a spiral shape, tucking the end underneath. Flatten gently with your palm.

Step 5: Final Rolling

  1. Using a rolling pin, gently roll the coiled dough into a flat pancake, about 1/4 inch thick. Repeat this process with the remaining dough portions.

Step 6: Cook the Pancakes

  1. Heat 1/4 cup of vegetable oil in a large skillet over medium heat.
  2. Once the oil is hot, carefully place one pancake in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  3. Remove the pancake from the skillet and drain on paper towels. Repeat with the remaining pancakes, adding more oil as needed.
